Grilled Zucchini Bites

These little bites are the perfect way to start an outdoor barbecue. Convert this to a grilled salad by slicing the zucchini the long way, grilling those with coconut oil, and topping with the salsa. Either way, it’s fresh, delicious and full of flavor.

Prep time: 15 minutes
Cook time: 12 to 15 minutes
Total time: 30 minutes
Serves: 8 to 10
1 medium tomato, diced
1/4 cup pitted kalamata olives, finely chopped
3 tablespoons toasted pine nuts
2 tablespoon chopped parsley
1 1/4 teaspoon kosher salt, divided
2 zucchini, cut into 1/4-inch wide slices
1 tablespoon LouAna® Coconut Oil or LouAna® Organic Coconut Oil
1 clove garlic, minced
In a small bowl, mix together tomato, kalamata olives, pine nuts, parsley and 1/4 teaspoon kosher salt. Set aside.
Preheat a grill pan or grill over medium-high heat.
In a bowl, toss zucchini slices with coconut oil, minced garlic and 1 teaspoon kosher salt. Place on grill and grill 3 minutes per side.
Serve each slice warm with a generous topping of the salsa.
