Goat Cheese Macaroni Salad

A modern version of a classic. Sweet roasted red peppers and creamy goat cheese give this salad a vibrant color and complex flavor.


20 to 25 minutes


Serves: 6 to 8


1/4 cup mayonnaise
2 tablespoons LouAna® 100% Pure Coconut Oil, melted
4 ounces soft goat cheese, room temperature
3 tablespoons red wine vinegar
1 tablespoon honey
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3/4 pound macaroni pasta, cooked according to package directions
1/3 cup chopped cornichons or dill pickles
1 14 ounce jar roasted red peppers, chopped
1/4 cup red onion, finely diced
1 cup fresh parsley, chopped


Add mayonnaise, coconut oil, goat cheese, vinegar, honey, salt and pepper to a blender and blend until smooth, adding a tablespoon or two of water if you have trouble bringing it together.

Add macaroni, cornichons, chopped peppers, red onion and fresh parsley to a large bowl. Toss with dressing to combine. Season with additional salt and pepper to taste.
