Crispy Rice Marshmallow Treats

With just three ingredients—coconut oil, marshmallows, and rice cereal—this modern take on the beloved sweet treat is easy to make and even easier to eat.

Yields: 8 treats
1/3 cup LouAna® 100% Pure Coconut Oil, melted
1 (10-ounce) bag mini marshmallows
5 cups crispy rice cereal
Line an 8 x 8 baking pan with wax or parchment and spray the inside of the pan with cooking spray. In a large saucepan, set over medium-low heat, melt the coconut butter. Pour in the marshmallows and stir until melted. Add the crispy rice cereal and mix until the cereal is thoroughly coated.
Transfer the mixture to the prepared baking pan. Rub a wooden spoon or silicon spatula with coconut oil. Using the back of the spoon or spatula, press the top of the crispy rice and marshmallow mixture until it’s smooth and tightly packed. Let the crispy rice treats come to room temperature, about 1 hour. Run a butter knife along the outside edge of the pan. Cut into squares and serve.
