Green Bean Fries

DESCRIPTION
Green bean fries are even more versatile (and yummy, using coconut oil) than the more famous pomme frites. They can be served like tempura with a soy dipping sauce, or with your favorite aioli for a Mediterranean spin.

SERVINGS
Serves: 4 to 6 (as an appetizer)
INGREDIENTS
3/4 cup panko breadcrumbs
1/2 cup unsweetened coconut flakes
3 tablespoons all-purpose flour
1/2 teaspoon sea salt
1/4 teaspoon onion powder
1/2 pound green beans, ends trimmed
1 egg, beaten
1/4 cup LouAna Coconut Oil or LouAna Organic Coconut Oil
DIRECTIONS
In a medium bowl, toss together the panko breadcrumbs, coconut flakes, all-purpose flour, salt and onion powder.
Creating an assembly line, first dip a green bean in the beaten egg, then transfer it to the panko breadcrumb mixture, making sure the green bean is thoroughly coated. Repeat the dipping and coating process until you’ve worked your way through all of the green beans.
Preheat the oven to 200 degrees F. Place a baking sheet in the oven.
Heat the coconut oil, over medium-low heat, in a medium-sized sauté pan. When the oil is hot, carefully add the green beans to the pan. You will have to cook these in batches. Cook the green beans on each side for 30 seconds or so, until the breadcrumbs are golden brown. Transfer the green beans to a paper towel to drain and then immediately place in the oven to keep warm. Repeat the frying process until you’ve cooked your way through all of the green beans.
