Roasted Herbed Lemon Chicken

Coconut oil keeps this classic roasted chicken moist and tender while highlighting the brightness of the lemon and herbs.

Serves: 4


2 pounds chicken (a mix of thighs, drumsticks, wings and breast)
3 garlic cloves, peeled and smashed
1 yellow onion, quartered
3 sprigs of fresh thyme
3 tablespoons LouAna® 100% Pure Coconut Oil, melted
2 lemons, quartered


Preheat the oven to 375 degrees F. In a 9 x 12-inch baking dish, arrange the chicken, garlic cloves, yellow onion and sprigs of thyme. Pour the melted coconut over the chicken, along with the juice of 2 lemons and a few pinches of salt.

Transfer to the oven to roast for 45 minutes to 1 hour, until the skin is crispy and golden brown.

Divide the chicken among plates and serve alongside a salad or roasted potatoes.
