Apricot and Chocolate Granola

DESCRIPTION
This is our go-to granola recipe. You can substitute the nuts for any you like. Just don’t skip on the apricots, chocolate and coconut oil—that’s what makes this one special.

Cook time: 35 to 45 minutes
Total time: 1 hour
SERVINGS
Yields: approx. 7 cups
INGREDIENTS
1/2 cup maple syrup
1/2 LouAna® 100% Pure Coconut Oil, melted
3 cups old fashioned oats
1 cup raw almonds, chopped
1 cup raw walnuts, chopped
1 teaspoon kosher salt
1 teaspoon cinnamon
1/2 cup dried apricots, chopped
3/4 cup dark chocolate, chopped
DIRECTIONS
Preheat oven to 325° F. Line a baking sheet with parchment paper.
In a small bowl, whisk together maple syrup and coconut oil.
In a large bowl, toss together oats, nuts, cinnamon and kosher salt. Pour in syrup and coconut oil mixture and stir to combine. Spread onto prepared baking sheet and bake for 35 to 45 minutes, stirring every 15 minutes until golden brown. For clumps of granola, don’t stir as often.
Allow to cool and toss with apricots and dark chocolate.
