Thai Coconut Rice

Aromatic Jasmine rice is infused with coconut oil and coconut milk, then served in heaping bowls with a side of verdant lime and cilantro, making this a perfect Southeast Asian comfort dish.

Cook time: 20 minutes
Total time: 25 minutes


Serves: 4 to 6


1 teaspoon LouAna Coconut Oil or LouAna Organic Coconut Oil
1 1/2 cup jasmine rice
1 can (14-ounce) coconut milk
1 1/4 cups water
1 teaspoon sugar
1/2 teaspoon salt
Handful of fresh cilantro leaves, as garnish
A few lime wedges, as garnish


In a medium saucepan, melt the coconut oil over moderately high heat. When the coconut oil has melted, add the jasmine rice and toast for 2 to 3 minutes.

To the saucepan, add the coconut milk, water, sugar and salt; mix until the sugar and salt has dissolved. Bring the mixture to a simmer and then immediately turn the heat down to medium low. Cook the rice, uncovered, for 15 minutes, until the rice is tender and the water has evaporated.

Transfer the rice to a serving bowl and garnish with a few cilantro leaves and wedges of lime.
