A colorful and crunchy salad topped with a dressing featuring LouAna® Avocado Oil.
5 cups chopped romaine lettuce
2 cups chopped seeded tomato
1 cup sliced cucumber
3/4 cup chopped red onion
1/2 cup chopped yellow bell pepper
3/4 cup shredded cheese
1/3 cup fresh lemon juice
2 tablespoons Dijon mustard
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped fresh parsley
3 tablespoons chopped fresh chives
2/3 cup LouAna® Avocado Oil
To prepare salad, toss the lettuce, tomato, cucumber, onion and bell pepper in a bowl and sprinkle cheese on top.
To prepare dressing, combine juice, Dijon mustard, salt, black pepper, parsley, and chives in a medium bowl, stirring well. Gradually add LouAna Avocado Oil, stirring constantly with a whisk. Just before serving, drizzle dressing mixture over salad mixture.
