Fried Fish Fillets

DESCRIPTION

For an American take on Fish & Chips, serve this irresistibly crispy dish with homemade fries.

SERVINGS

Serves: 4–6

INGREDIENTS

1 cup all-purpose flour, plus a little extra for coating fillets
1 (12 oz.) bottle of beer
1 large egg
8 (4 oz.) fillets of cod or other firm white fish
2 teaspoons Old Bay® Seasoning
Salt and pepper to taste
2 quarts LouAna® Peanut Oil
2 teaspoons chopped parsley
1 lemon, cut into wedges

DIRECTIONS

In a large wide pot, heat LouAna Peanut Oil to 375°F. Mix together 1 cup flour, the egg, and the beer until smooth.

Pat the fish fillets with paper towels to remove excess moisture. Season the fish with Old Bay Seasoning and salt and pepper, then coat with flour. Drag each fillet in the beer batter and place in the oil. Fry until golden brown, flipping once.

Drain on a wire rack, garnish with chopped parsley and serve immediately with lemon wedges.

SAFETY FIRST

There are two options when frying fillets. You can take the traditional approach and use propane fryers. They should be used outdoors in accordance with the manufacturer’s safety procedures. Never use them on a wooden deck or leave them unattended. The second option is to use a Masterbuilt® Electric Deep Fryer that can be used indoors on kitchen countertops, tables, inside garages, and on covered patios. Be sure to always keep children and pets away. But either way you choose, always remember:
• Wear oven mitts.
• Avoid use of alcohol and keep a fire extinguisher nearby, as you would with any type of cooking.
