Garlic Ginger Coconut Rice

  • 2 tablespoons Lou Ana Coconut Oil
  • 3 cloves garlic, minced
  • 2 tablespoons minced fresh ginger
  • ½ cup coconut milk beverage
  • 1 cups sweet brown rice, cooked
  • ¼ cup shredded coconut
  • 1/8 teaspoon salt to taste
  • 2 tablespoons fresh chopped cilantro

In large saucepan, heat coconut oil on medium high heat. Add garlic and ginger and sauté for 2 minutes before adding coconut milk and stir. Stir in cooked rice and shredded coconut. Season with salt to taste. Top with fresh cilantro to garnish.
