Croque Monsieur

  • 2 1/2 gallons LouAna Peanut Oil
  • 12 pieces hearty country white sandwich bread
  • 6 (1-ounce) slices Gruyere cheese
  • 12 ounces thinly sliced baked deli ham
  • 6 tablespoons Dijon mustard
  • 2 cups all-purpose flour
  • 1 cup cornstarch
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups whole milk
  • 3 large eggs

Pour oil into a large deep fryer; heat to 375 degrees.  Arrange 6 bread slices in a single layer on a work surface.  Place 1 cheese slice on each of the 6 bread slices; top each with 2 ounces ham.  Spread 1 tablespoon mustard over each of the remaining 6 bread slices; place bread, mustard side down on ham.  Cut each sandwich in half diagonally.

Combine flour, cornstarch, baking powder and salt in a large shallow dish.  Combine milk and eggs, stirring well with a whisk.  Slowly add milk to flour mixture, stirring constantly until smooth.

Dip sandwiches in batter.  Carefully lower 6 sandwich halves into oil; fry at 375 degrees for 1 1/2 minutes.  Using a slotted spoon, carefully turn each sandwich half over; fry an additional 1 1/2 minutes or until golden.  Repeat frying procedure with remaining 6 sandwich halves.  Serve immediately.

Safety First

There are two options when frying a turkey. You can take the traditional approach and use propane fryers. They should be used outdoors in accordance with the manufacturer’s safety procedures. Never use them on a wooden deck or leave them unattended. But either way you choose, always remember:

  • Wear oven mitts.
