To prepare dipping sauce, combine first 5 ingredients in a bowl, stirring until sugar dissolves. Let stand at room temperature 30 minutes. Stir in peanuts.
To prepare spring rolls, pour oil into a deep fryer; heat to 350 degrees. Combine shallots and next 6 ingredients (through salt) in a food processor; process until finely ground, scraping sides. Add mushrooms; pulse until ground. Place pork in a mixing bowl; stir in mushroom mixture.
Working with one spring roll wrapper at a time (cover remaining wrapper with a damp towel, so they don’t dry out). Place the wrapper on a smooth work surface with one edge pointing up and one pointing down. Place 3 tablespoons pork filling in the bottom 1/4 of wrapper. Fold right and left edges in evenly. Beginning with bottom edge, roll wrapper up tightly into a neat cylinder. Repeat procedure with remaining wrappers and filling. Fry spring rolls at 350 degrees for 4-5 minutes or until golden. Serve with dipping sauce.
There are two options when frying a turkey. You can take the traditional approach and use propane fryers. They should be used outdoors in accordance with the manufacturer’s safety procedures.
