Banana Snack Cake

DESCRIPTION

Snack cakes are quite possibly our favorite things ever. We’d happily snack on cake until dinnertime. And with this particular cake, which is loaded with bananas, whole-wheat flour and coconut oil, it’s full of wholesome goodness. So snack away.

PREP, COOK, TOTAL TIME

Prep time: 15 minutes
Bake time: 65 minutes
Total time: 2 hours (includes cooling time)

SERVINGS

Yields: 1 loaf

INGREDIENTS

3 ripe bananas, mashed
1 cup dark brown sugar
1 egg, beaten
1/2 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup LouAna® Coconut Oil, melted
1 cup all-purpose flour
1 cup whole-wheat pastry flour
1 cup dark chocolate chips (optional)

DIRECTIONS

Preheat oven to 350° F. Grease a standard loaf pan with coconut oil.

In a large bowl, mash the bananas. Mix in dark brown sugar, egg, salt, baking soda, cinnamon and coconut oil. Now stir in flours and finally dark chocolate chips.

Pour into prepared pan and bake for 65 minutes, or until tester inserted into the center of the cake comes out with only moist crumbs attached.

Cool on a baking rack at least 30 minutes before slicing.

    Hi, whole-wheat pastry flour and all-purpose white flour cannot be used interchangeably without impacting the texture of the cake. The best substitute for whole-wheat pastry flour would be a combination of ½ cake flour and 1/2 whole wheat flour.

    I am using lt. Brown sugar and substituting KA all purpose for the wheat flour as I don’t have any. Is this O.K?

    Hi there – good question! There are few ways:

    If you leave the jar out in room temperature, it will slowly start to melt

    You can also scoop out the desired amount and microwave the solid until it melts (you won’t need a lot of time – it’s similar to melting butter)

    Last, we sometimes run the jar under hot water (or submerge in a bowl of hot water) to get it meltng quickly
