Salty & Sweet Roasted Pecans

DESCRIPTION

I try to keep a jar of roasted nuts in the cupboard for afternoon snacking, unexpected guests or midnight munchies. The combination of sweet and salt with a hint of coconut oil is perfect any time, day or night!

PREP, COOK, TOTAL TIME

Prep time: 10 minutes
Cook time: 15 minutes
Total time: 25 minutes

SERVINGS

Yields: 4 cups pecans

INGREDIENTS

4 cups raw pecans
1/3 cup LouAna® 100% Pure Coconut Oil, melted
1/4 cup honey
1/4 to 1/2 teaspoon salt
1/4 teaspoon ground cinnamon

DIRECTIONS

Place a rack in the center of the oven and preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside. In a medium bowl, whisk together coconut oil, honey, salt and cinnamon. Add the pecans and stir to coat.

Spread onto the prepared baking sheet in a single layer. Roast of 12 to 15 minutes or until fragrant and toasted. Remove nuts once during baking to stir and toss.

Allow nuts to cool before serving. Store in an airtight container at room temperature.

    I almost left the cinnamon out because coconut and cinnamon sounded weird to me, but I’m soooooo glad I went for it. Yummy!
