Dipped Frozen Bananas

DESCRIPTION

Bananas are enrobed in dark chocolate and coconut oil, then get the gourmet treatment with a trio of almonds, pistachios and peanuts.

SERVINGS

Yields: 8 frozen bananas

INGREDIENTS

12 ounces dark chocolate
4 tablespoons LouAna Coconut Oil or LouAna Organic Coconut Oil
4 ripe yet firm bananas
1/4 cup pistachios, finely chopped
1/4 cup peanuts, finely chopped
1/4 cup almonds, finely chopped

DIRECTIONS

Line a plate or small baking sheet with parchment or wax paper and set aside.

In a double boiler (or a heat-proof bowl set over a pot of simmering water), add the dark chocolate and coconut oil. When the chocolate begins to melt, stir until very smooth.

Cut the bananas in half and insert a skewer into each piece. Place the pistachios, peanuts and almond slivers onto a flat plate. Dip each banana into the melted chocolate, allowing any excess chocolate to run off. Quickly roll the chocolate covered bananas in the nut mixture. You may find it easier to sprinkle on the nuts in certain places. Transfer the banana to a wax paper-lined plate or baking sheet. Repeat this process until you’ve worked your way through all of the bananas. Place the bananas in the freezer until firm, about 4 hours.
