Penne with Sausage, Garlic and Broccoli

This dish is pure comfort. Classic flavors paired together to create a flavorful and simple pasta dish. Be sure to serve with plenty of Parmesan.

SERVINGS

Serves: 4 to 6

INGREDIENTS

2 tablespoons LouAna® Canola Oil
1 bunch broccoli, cut in small florets
1 pound penne pasta
1 pound sweet or spicy Italian sausage
Pinch of red pepper flakes (optional)
2 cloves garlic, thinly sliced
3/4 cup freshly grated parmesan, plus shavings of Parmesan to finish

DIRECTIONS

Bring a very large pot of well salted water to a boil. Add broccoli and cook for 5 minutes. Meanwhile, prepare an ice bath by putting ice and cold water into a large bowl. Remove broccoli from boiling water with a slotted spoon and place in ice bath to stop the cooking and set the bright green color. Remove broccoli when cool and drain on a clean kitchen towel.

Return water to a boil and add penne pasta. While it cooks, finish the rest of the dish.

In a large Dutch oven over medium-high heat, add LouAna Canola Oil, pinch of red pepper flakes and Italian sausage. Cook until brown, about 5 or 6 minutes, breaking apart as it cooks into bite-size pieces. Once brown, add sliced garlic and sauté for 2 minutes, and then add cooked broccoli.

When pasta is al dente, drain and add to the sausage and broccoli mixture. Toss well to combine and then add parmesan. Toss well. Serve with additional Parmesan shavings on top.
