Skirt Steak Tacos

DESCRIPTION

These tacos are so quick to throw together, and yet their flavor goes beyond their simplicity. They are sure to be a weeknight favorite.

PREP, COOK, TOTAL TIME

Prep time: 30 minutes
Cook time: 10 minutes, plus 15 minutes to rest
Total time: 55 minutes

SERVINGS

Yields: 8 to 10 tacos

INGREDIENTS

2 tablespoons LouAna® Coconut Oil or LouAna® Organic Coconut Oil
1 pound skirt steak
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
8 to 10 small corn tortillas
1/4 cup white onion, finely diced
1/2 cup cilantro, chopped
1/2 avocado, chopped
1/4 cup Cotija or other favorite cheese
Lime wedges

DIRECTIONS

Sprinkle the steak with salt and pepper and allow to sit for 30 minutes at room temperature. Meanwhile, prepare all the toppings.

After 30 minutes, add coconut oil to a cast iron or favorite skillet and preheat over high heat until smoking slightly. Add steak and allow to cook, untouched, for 5 minutes on either side on medium. Allow to rest 15 minutes before dicing into 1/4- to 1/2-inch size pieces.

Warm corn tortillas on a flat-top or in the oven. Top with chopped steak, sprinkle of onions, cilantro, avocado and cheese. Serve with a wedge of lime. Alternatively, serve beef and toppings at the table and let everyone build their own.

    Love this recipe. I have tried this with grilled salmon. Beautifully browns salmon on the outside.
