Homemade spring rolls made with LouAna® Peanut Oil are just-right crispy.

INGREDIENTS

Spring Rolls:
2 1/2 gallons LouAna® Peanut Oil
2 medium shallots, peeled
1 lemongrass stalk, trimmed and thinly sliced
1 (1-in.) piece ginger, peeled and grated
2 tablespoons fish sauce
1 tablespoon toasted sesame oil
1 teaspoon Thai chili garlic paste
3/4 teaspoon salt
1 (3.5 oz.) package shiitake mushrooms, stems removed
1 (1.25 lbs.) package ground pork
12 square spring roll pastry wrappers

Dipping Sauce:
1/2 cup fresh lime juice
6 tablespoons fish sauce
1/4 cup granulated sugar
1 serrano pepper, seeded and minced
1 large garlic clove, minced
3 tablespoons chopped roasted peanuts

DIRECTIONS

To prepare dipping sauce, combine lime juice, fish sauce, sugar, serrano pepper and garlic in a bowl, stirring until sugar dissolves. Let stand at room temperature 30 minutes. Stir in peanuts.

To prepare spring rolls, pour LouAna Peanut Oil into a deep fryer; heat to 350°F. Combine shallots, lemongrass, ginger, fish sauce, sesame oil, garlic paste, and salt in a food processor; process until finely ground, scraping sides. Add mushrooms; pulse until ground.

Place pork in a mixing bowl; stir in mushroom mixture.

Working with one spring roll wrapper at a time (cover remaining wrappers with a damp towel, so they don’t dry out), place the wrapper on a smooth work surface with one edge pointing up and one pointing down. Place 3 tablespoons pork filling in the bottom 1/4 of wrapper. Fold right and left edges in evenly. Beginning with bottom edge, roll wrapper up tightly into a neat cylinder. Repeat procedure with remaining wrappers and filling.

Fry spring rolls at 350°F for 4 to 5 minutes or until golden. Serve with dipping sauce.

SAFETY FIRST

There are two options when frying spring rolls. You can take the traditional approach and use propane fryers. They should be used outdoors in accordance with the manufacturer’s safety procedures. Never use them on a wooden deck or leave them unattended. The second option is to use a Masterbuilt® Electric Deep Fryer that can be used indoors on kitchen countertops, tables, inside garages, and on covered patios. Be sure to always keep children and pets away. But either way you choose, always remember:
• Wear oven mitts.
• Avoid use of alcohol and keep a fire extinguisher nearby, as you would with any type of cooking.
